Not 100% I understand your question.
You can use Winshuttle Query to pull data from SAP, as well as apply excel formulas to the output. You can refresh on demand by running the Query again or scheduling it.
For non-SAP data, Excel allows you to pull data in from a wide variety of sources. Whether they can apply formulas or not will differ based on the source, but you can certainly apply them afterwards.
