We have a requirement to restrict our users to only load and/or approve data for the country/region that they belong to. How would that typically be done in Foundation workflows?

There are potentially several to accomplish this.  A few that come to mind:

1. Use region to drive assignments.  The part you'd need to figure out is, what country is the submitter in?  That region would then drive assignments via participant resolvers - either in the form or in the workflow swim lane.
   • If it's in there Sharepoint or AD profile, you can read it from the user information. 
   • Or if you can count on the browser language, you could use that.   There's a reference to it in the documentation:  $form.language :  https://winshuttle-help.s3.amazonaws.com/foundation/en/composer/winshuttle-composer-javascript-form-functions.htm#o17973 
   • Otherwise, you'd have to find another way to determine which country they belong to, such as a lookup in SAP, a SharePoint list or a SQL database.  
2. setup forms in sub-sites by country, where they can only start and interact with processes in their country.   However if you need to support many countries, this may not be viable.
