Hi Shelby,
If it is not under deleted items in recycle bin, it might have been archived.
You can check it on archive page : Administration App-> Archive.
If it is not visible as well, Run query on evolve database : select * from FR_FileInfo_DataFiles where FileName = 'Name of the Document'
If there is any item returned from the query, then it exists in the system but not visible on UI, otherwise it does not exist in the system.

Thanks! I will review the link about the perm deletion setting. We had a user mention that they could not find a document and thought it was deleted, however I did not see it under recycle bin. Would this be the only location in Evolve to check? The data from the document was updated in SAP on 6/28 so it has not quite been 30 days yet.

you can restore deleted documents from Recycle bin.
Go to Administration app -> from left menu select Recycle Bin -> Expand documents section and restore the desired document.
Note : by default deleted items from recycle bin are permanently removed from the system after 30 days. you can change recycle bin Configuration to not remove items permanently.
